In my 30 years of being a Canadian, I have never heard anyone ever say Poutine is a delicacy. It's just a different way to have your fries if you want. The only time it comes close to a delicacy is when you go to a place that specializes in Poutine. Good fresh cut, crispy fries, quality gravy and curds, and extra toppings like pulled pork or brisket and some chives or whatever you want to put on it. That's good Poutine. Also mayo-ketchup on fries is a European thing. Stay strong Luke, I'm wishing all the best for Barbus. It's insanely rough. We lost our dog a few months after my Dad passed away 3 years ago, and then lost the best cat I've ever had a year ago. They become another member of the family. Stay strong Luke.
