150g butter.
Mix well.
Cover with cling film.
Let cool down.
Beat with a mixer for 3-5 minutes.
For the sponge cake dough:
120g flour.
30 g cocoa powder.
1 teaspoon baking powder.
1/2 teaspoon baking soda.
Mix everything into a smooth dough.
6 egg whites.
1 egg.
150g sugar.
Beat until lightened.
120g sour cream or Greek yogurt.
80 ml vegetable oil.
A 20cm baking tray.
Bake in a preheated oven at 180°C for 40 minutes.
Let cool down.
Cut off the top layer.
Cut into 2 equal parts.
Assemble the cake.
Leave some cream for decoration (cover with cling film and store in the fridge).
Ganache for the coating:
80g dark chocolate.
100 ml hot cream (33-36%).
Stir until smooth.
Leave the cake in the fridge overnight.
Decorate:
I have 300g of cream filling left.
Add 20 g cocoa powder.
Stir until smooth.
Decorate the cake.
Crumble the top layer of the sponge cake dough.
