I bought real otoro before from the popular Japanese market Mitsuwa. Had a lot of marbling on it and you seriously can barely even pick it up with your fingers (I tried to make my own nigiri sushi at home ) and the fish piece literally melts like butter. I was so shocked at how fragile it was and realized this was something for a pro sushi chef to handle with because they can make them quickly so that it won't fall apart. That said, omg was cutting a slab of otoro challenging. By the time I was done cutting only, my hands were seriously covered in melted fat. Needless to say putting together the nigiri in the end...it looked sad lool because so much of the fish pieces had melted. Props to real sushi chefs.
