But today’s recipe is the Instant mango pickle recipe.Cook everything together or keep the pickle in sunlight for 2 to 3 days.Both ways the jaggery that is used in the pickle thickens a bit. If you cook you will get a softer texture of mangoes. If you keep in the sun then the mangoes will have a little crispness to them. You decide how you would love to make this pickle.

INGREDIENTS
Kacha aam (green mangoes) 1 kg
Sugarcane jaggery 1 kg
Mustard oil 2 tbsp
Tej patta/ bay leaf 2 pis
Dry red chillies 5-6 pis
Panch phoron 1 tsp
Ginger julienne 2 tbsp
Salt 1 tbsp ( according to your taste )
Termeric powder 1 tsp
Kashmiri red chilli powder 1 tsp
Sugar ½ cup ( optional )
FOR DRY ROASTED SPICES
Dry red chillies 6-7 pic
Coriander seeds ½ tsp
Panch phoron ½ tsp
Fennel seeds ½ tsp
Cumin seeds ½ tsp
