For people who "don't like" fish sauce, if you've eaten at any good Asian restaurant, you've had fish sauce in the meal whether you know it or not because it is an ESSENTIAL ingredient. The implication is that you may think you don't like something you have gotten over and over again w/o knowing it.

I do understand that I would not have to use that. Fish sauce has always sounded, ah -- not so good -- to me. You confirmed that. But there are options which makes this dish a wonderful one to try.

as you stated, cooked and refrigerated rice works even better - the starch changes and gets firmer overnight - adding the garlic first is unusual since it burns so easliy - looks good - son looks like Phyllis

This is the best fried rice tutorial ever! I picked up on so many tips - especially using cast iron skillet (never owned wok) I wouldn’t use to scramble the eggs in though - cast iron eats the eggs up … that’s why you needed 10 eggs 😮 You can never have too many onions in my opinion…sautéed and then some crunchy! Kudos to the guys cooking!! I know your mom must be beaming with proudness from heaven… I miss her … Ty for all your content! 🤗🐢

Looks delicious Lt. Ritter! I love sriracha sauce and I think it’s a great addition to the fried rice. I can’t wait to try it your way. I always say I’m making fried rice with leftover rice but in my house it’s hard to have leftover rice no matter how much I cook. I’ll cook and refrigerate some overnight just for this recipe. Maybe add a drizzle of sesame oil at the end. It’s also a good way to use up leftover veggies.

best thing umami just use it to replace salt, and if you use it correctly you actually don't taste the fermented anchovies, it just amps up the savory flavor try using it in salad dressing instead of salt

Good to see Benjamin again! I only use Ben’s converted rice, so that’s what I use for fried rice. I never scramble eggs in cast iron either. I just make it simple, onion, diced bacon, eggs. No carrots, takes too long to cook. 😅 Just a little low sodium soy, no fish sauce. And I never make as much as this! 😊 It looks delicious and oh I know it smells great. Take care and enjoy! 😊
