Update: I'm eating this right now. I never had much luck keeping omelettes together so I was skeptical. But when I flipped it over the egg and cheese had set up perfectly. I actually said, "wow, it worked!" The rest was just a matter of flipping until the outside was crispy. Even I could do that. Great recipe!

I've got a tip for you. When the omelette is ready to be flipped, just put a large plate over the skillet and flip them. You should end up with the half cooked omelette on the plate, cooked side up. Now just slide it on the skillet again. Just don't use too much oil and don't do it in slow motion, you don't want boiling oil on your skin.

The butter for none stick and the water with lid make all the difference. My wife and I watch all your videos together, we’re not allowed to watch them without the other being present! I have to modify a bunch of your stuff for my daughters diet, she has Crohn’s, so that changes the dynamic of what we prepare, but your ideas gives me a jumping off point. The only thing that can beat biscuits and gravy or breakfast burritos is a quesadilla. My son and I LOVE quesadillas for breakfast, lunch and supper! This is our new favorite. I was skeptical at first about the egg trick, but wowzers! We didn’t have any ham so I used some leftover taco meat and pinto beans. 😋 We Texans love Kent Rollins and Ariat! My favorite breakfast video was on how to scramble eggs in the cast iron. Maybe that's more of a cast iron video, but the technique really works! I get a nice fluffy scramble with little or no sticking. I gotta say, this recipe looks like a winner. I'm gonna have to try it.

Trying to pick your favorite Cowboy Kent video is like trying to pick your favorite cooking helper. Mine is our puppy Mabel. I had to go with this breakfast Quesadilla as my "new" favorite. I was able to take this approach and make it the very next morning. I used the basics of a couple of cackle berries and some Cowboy Kent Mesquite seasoning. I filled it with a combination of grilled chicken, beef and baby shrimp with grilled onion, pineapple, mushrooms and green peppers. All held together with a little Colby/jack cheese. AMAZING! A quick and easy, customizable breakfast option that my wife says we have to make again. I agree. Thanks Kent and Shannon, you never fail to satisfy!😋😋😋😋
