Looks amazing. Medium low heat is what I use so I don't flirt with oil catching fire. I've seen oil ignite in a wok before and it was a scary kitchen fire. I was young when I witnessed this. As an adult I was paranoid to cook with oil. But I'm okay now. Setting the stove halfway between medium and low usually works but every stove is different and should be tested. I probably sound paranoid still haha. I do like how you tested with the potatoes frequently. Once it starts bubbling you know water is evaporating and you are up to temp and you dropped the heat. Perfect. Now my only problem is I'm hungry. 😄❤ Thanks for sharing. I might make these tonight!

Those look great. I never seen anybody add pepper while the chips are in the oil. Interesting technique but I’m sure it spreads the pepper flavor around nicely. Can’t wait to try them one day.
