My first time ever baking a carrot cake, I have to share with you that I searched tons of website not only for the right recipe but for the right person in the video and I am glad I can across your video, you not only made it easy to bake a carrot cake but your personality and charisma were wonderful. After baking my first carrot cake "thanks to you" I received a lot of compliments from it. Thank you for sharing your recipe and "yes" it is the best carrot cake ever.

I add crushed pineapple and a dash of vanilla and nutmeg. I also use raisins or cranberries in my carrot cake. Your wife did a good job.

This is the Best Carrot Cake ever!!! Put in 4 cups of carrots, cut back on the sugar, raisins because no nuts. Buttered and cinnamon sugared the pans!!! Delish! Thank you for sharing!!!

I never made cake, from "the box". I only make "from scratch". Yet I've also never made A carrot cake... So I looked it up in youT. I'm so glad, too! May youTube stay forever! 😊 I know you posted this years ago, and you stated it's not necessarily healthy... But I already know how to adjust ingredients; incorporating flaxseed flour, quinoa flour, almond flour... and Pure cane sugar (as opposed to bleached, refined processed white sugar) and AS WE KNOW... There's nothing wrong with actual BUTTER for the body (unless allergic/reactions to milk products). This recipe is a great Basic forthright recipe for anyone who loves cooking. Just wanted to say this, and that your presentation was "spot on funny, warming and heartfelt ". Thanks so much for being yous, in this video! (Especially loved vanilla presentation) LOL. I'm going to try it without the the frosting since I ran out of cream cheese and it is raining outside and I'm in my PJs right now so I'm not leaving the house today at all LOL and I will be replacing the butter for coconut oil so since it's wonderful as a butter replacement since I used all my butter on my Thanksgiving Turkey two days ago and on some yummy brownies that I made as well. You guys are so adorable though.

Quick update the carrot cake just came out of the oven and it came out so moist and bawm with the coconut oil instead of butter, brown sugar instead of regular sugar, and no frosting because didn't have frosting ingredients and I can't wait to try it out one of these days with the frosting as well :)

Ok, been researching carrot cake recipes for about 2 weeks. I'm supposed to make one and bring it to work tonight. So I thought I'd give your recipe a try. The batter itself taste great. Ok. Fast forward. Cakes out of the oven and cooled, but wouldn't flip out of the pans. WTW, never had that happen before. But I only made 2 layers and the rest in cupcakes. So we nurses are hving carrot cupcakes with our coffee tonight. I'll figure out what went wrong later. But I did taste it and it is truly scrumptious. My fat girl is happy. :)

Back in the 70s, yes I'm that old, I made a carrot cake using baby food, carrot baby food, it was moist and delicious. I lost the recipe years ago and haven't made it since but it sure was good!

In our house, carrot cake is our Easter cake :) I use walnuts as pecans are difficult to come by here. I also add 2 oz of sultanas - great choice of pud and great job Mrs Brad ;) x
