I wouldn't even make this dish without the peanut sauce...the "fried" part and the "peanut" part are my favorite parts of this dish

@@ChefBuckRecipes I love peanuts.... Unfortunately in my 40's I became allergic. My boyfriend at the time was eating jars and jars of Planters Roasted Peanuts. Maybe it is all psychological and I am just allergic to him..lololol. Have not had a serious reaction...thank God. My throat closes up some and my tongue starts tingling. I miss peanut butter and jelly sandwiches, peanut butter on toast, candy bars with nut, etc. Thank God my reactions have not been serious, just a warning I pay attention to. To me it is strange. Was never allergic before him. Make your recipes with peanuts. I am not allergic to watching....

CG and I are fooling around with house-stuff in Florida...most of our family is in Georgia and Florida--luckily, everyone we know escaped major damage from the storms--but it seems like everyone has some small challenge to deal with after back to back hurricanes

Good recipe, but I prefer to use pankko bread crumbs vs all AP flour on chicken, pork, fish/shrimp/oysters, eggplant, zucchini, etc. Method: flour, egg and pankko crumbs. It is lighter, less greasy and stays crispy longer. Makes great chicken katsu and pork tonkatsu.

thanks for the kind words! Over the years we've gone through different oil phases, but for the last few years we've been in a mostly olive oil stage. I call myself Chef Buck, but I'm more like Cook Buck. I just did the count in my head, and I've worked about a dozen different restaurants since the early 90's; mostly destination resort work, but really as a cook rather than a chef, since "chef" is more of a managerial position in a lot of restaurants. I never attended a culinary school, but I always found being mostly sober was the main thing employers were looking for in the restaurant biz.

I'm sorry but there is no way I could ever make this dish. I'm very allergic to sharp knives. For some reason all of my kitchen knives are dull. All kidding aside, this chicken dish looks delicious Buck. I will experiment with the peanut sauce. Hope you and camera girl are doing okay.
