That is called Scallop Coral, the reproductive organs. It is edible, and considered a delicacy.

Is it normal to have to ask for wasabi at sushi spots in Japan? I feel like it’s a necessity here in Hawaii haha

Typically I see wasabi available on the table at most conveyor belt sushi restaurants. This particular restaurant didn't seem to have it available at the table. Not a big deal, as the staff caters to foreigners, so you should not have a problem getting wasbi without a problem.
