My wife and I lived in Beni Suef where I worked. Our Egyptian housekeeper's father was a falafel street vender. She used to bring us Falafel in the morning and then bring us the prepared batter. I've eaten Falafel from all over the Middle East and North Africa and without a doubt, the Egyptian is the best. Thanks for the tip about the Fava Beans. Now, I'll look on your channel for some Ful Beans!

What I love the most about this channel is the fact that I grew up hearing about these dishes in Egyptian movies, as a Moroccan who grew up watching Egyptian movies and tv shows, I would hear people talk about foul we taameya, kochary, molokheya, ma7chy, 7amam belfereek, makarona bel bechamel,... but I was never curious enough to look up the recipes. Now I feel closer to my fellow Egyptians and to their culture through watching this channel. Needless to say I am hooked! Outstanding job you guys!

Anyone watching this from Ulm, Germany should drop everything, go to Pingu Cafe in Münsterplatz and get yourself some authentic Egyptian falafel! Best falafels I've ever had. Wow Obi, you never let me down. I made these tonight and they were amazing! The best falafel I ever had was 22 years ago from a little place in the middle of Cairo. They had a huge crowd of people rushing to the front waving their hands in the air to place their orders. It reminded me of footage you see of the New York Stock Exchange in the 80s. I’ll never forget it. These remind me so much of that delicious food I had so many years ago. Thanks for the recipe and thanks for everything you do with your channel.

I remember I went to a local cafe regularly before lockdown, they had a freshly made falafel wrap that always blew me away - the falafel inside were bright green and always super moist and fluffy and flavourful. In hindsight they must've been Ta'ameya! No wonder they were so good...

to my knowlage every good falafel is that green, even the "normal" chickpea based ones. If it is not bright green it will not taste right. I am very curious to try these to see, how much of a difference the beans make, for otherwise, the recipe I am used too is pretty much the same ^^

I'm used to eating my family's Lebanese falafel. While I'll probably still use a mix of fava and chickpea, I have to say I am very impressed by the amount of technique involved in Egyptian falafel and learned a lot from watching this video!

Thank you. We honestly had no idea what the actual technique was, because Egyptian home cooks always use Bicorbonate of soda in their falafel to get it fluffy. After watching a bunch of videos from restaurants, my wife had the amazing idea to whip it up, and it worked perfectly. It's definitely quite technical, but it makes sense from a restaurants perspective. Fluffy taameya, has more air in it, so you can make more balls with the same amount of batter and therefore more money. And on the plus side, it's a lot lighter.

During the pandemic I've perfected my skills in making houmous, baba ganoush and muhammara. (I'm sure there are spelling mistakes there. :-)) Falafel has been on my list of things to do next, and this version with the fluffy fava bean batter looks delicious. Just wanted to say a couple things that I hope you and your wife get a chance to see! I've made this dish two days in a row (the first day, the 400 grams of beans did not make enough to feed my family of 5 haha). My second day making it (today) went phenomenally. They were delicious, fluffy, crispy, etc! I found you two through Adam Ragusea's podcast and I told myself I absolutely had to try making one of your recipes - I found this one and loved the concept of them. Well worth the effort! You've helped a small-town guy from Michigan introduce my family to Egyptian/Middle-Eastern cuisine. We try very hard to make a recipe from different cultures at least once a week, but we always had so much trouble finding food to make from Africa/M.E. This channel has allowed us to experience a culture/cuisine that would have otherwise been impossible for us to experience at home because of language barriers. Cheers!

Tried this recipe and it turned out DELICIOUS!!! Thank you so much for the detailed, well edited video. I had almost everything at home expect the spring onions so used roscoff onions instead. Will make sure to try it with spring onions at some point although not very easy to come by where I live. This makes for a much brighter in flavour type of fallafel than recipes I've tried before (love my usual Palestinian recipe) but something about ta'ameya is more satisfying. My favourite flavouring in here that I had never added/had in falafel before is the leek, it makes a massive difference.

I've made many falafel recipes over the years and this is the one I always come back to. The texture is just superior. Also fava beans are immensely better than chickpeas nutritionally (around twice the protein and fibre per calorie). So happy to see how this channel has grown since this first came out. Just made this recipe. Didn’t have fava beans so I used Lima beans. Didn’t have leek so I used a little bit of white onion. I didn’t do the seed exterior for lack of time. But it came out great! Very tasty. I’m making balls to freeze for future use. Thanks for posting this recipe.

Where do you buy favas is the Midwest? I find small packages ar Mexican shops. Crazy prices for small 200 gram little plastic bags. I want to buy big sacks to eat foolmedanes ( spelling?). Ah... i dream to eat melokia soup like back home in Southern Africa of my youth !!

@@MiddleEats The whipping technique (Kitchenaid stand mixer) worked brilliantly. Also, your recommendation of using an ice cream scoop saved the day. (I was in a bit of a hurry and did not have time to try the plastic wrap technique - perhaps next time.) No photos, sorry, never occurred to me - next time, I promise. As for high limits on low LTV mortgages, I am the GOOD Boris, and therefore sadly not in a position to bring about change. 😤

Amazing, glad to hear it made them fluffy. Yeah the ice cream scoop makes it so easy, and because the batter is wet, unlike chickpea, you don't need to work on packing it in to the scoop. Ah that's a shame, could do with a better kitchen 😁
