You can find villagers inside caves too. I found a couple inside the frostlands caves. You will see campfire and often close to the entrance/exit.

I noticed there are very few spiders and black wolves in the grasslands. I also had a skeleton do a dance emote which I never saw before. Why are pigs in the desert? So far I've seen no bears.

No, there is a limit of 3 animals per village (assuming it's upgraded to max) so it's better to have one each, one cow, one sheep and one chicken, to have different stuff from them, but it's a self preference after all :D Good luck
