I boondock in mine all the time for a week or so at a time. I just make my meals largely grain or bean based with a little bit of meat. I usually come back from a trip with food left over. I’m not interested in induction cooking outside. Rather have a campfire or pull my Instant Pot outside with an extension cord.

Tiny freezer. Cant boondock in this long. Need induction cooktop to be removable to take outside. Most B vans have larger fridges.
