The minced garlic for garlic chili oil must be cooked for 3 minutes at 250°F in order to kill off botulinum bacterium. If you pour the oil over make sure to eat it within a few days for safety. Also the garlic will be crunchy and delicious cooking it!

I just made garlic chili oil using another youtuber’s recipe, but she did the pour over method, and didn’t cook the garlic like you did. She said the garlic chili oil should be good in the fridge for 3 months. But now I’m concerned about not cooking the garlic, and the botulinum bacteria you mentioned. I don’t want to throw out all the garlic chili oil I made but don’t know if I should keep it. It’s already been a few days since making it.
