Homemade yellow noodles with sweet potato gravy… 🍜 Recipe: Gravy: * 250g sweet potato * 200g potato (optional) * 1.3 liters water * 3 tbsp ground peanuts * Salt to taste * 3-4 tbsp oil for cooking * 2-3 tbsp dried chili paste * 2 tbsp curry powder (optional) * 2 tbsp taucu (fermented bean paste) * 3 tbsp palm sugar or white sugar * 3 tbsp tamarind paste Blended Ingredients: * 3 shallots * 4 garlic cloves * Thumb-sized piece of ginger * 1 lemongrass stalk (white part only) * 50g galangal * 2-3 tbsp water (if needed) Vegetable Fritters: * 1/2 cup all-purpose flour * 1/2 cup rice flour * 1 egg * 1 1/4 cup water (adjust as needed) * 1/4 tsp turmeric powder * 3 tbsp cornstarch * Handful of bean sprouts * 1 yellow onion, sliced * Handful of chopped scallions * 1 fresh chili, sliced * 1/2 tsp salt * Oil for frying For Serving: * 800g yellow noodles * 150g bean sprouts * Fried tofu, sliced * Red and green fresh chilies * Lettuce, chopped * Boiled eggs, halved * Chopped coriander * Calamansi limes * White vinegar * Vegetable fritters How to Make It: Gravy: 1. Steam or boil the potato and sweet potato until soft. Mash them and set aside. 2. Heat oil in a pot and sauté the blended ingredients until fragrant. 3. Add dried chili paste and curry powder (if using). Sauté until the spices are cooked and fragrant (pecah minyak). 4. Stir in water, mashed potato and sweet potato, tamarind paste, taucu, ground peanuts, palm sugar, and salt. 5. Simmer for another 5-8 minutes. Set aside. Vegetable Fritters: 1. In a bowl, mix all the fritter ingredients until combined. 2. Heat oil in a wok and scoop 2 heaping tablespoons of the mixture into the oil. 3. Cook for about 1 minute on each side until golden brown. 4. Transfer to a paper towel to drain excess oil. To Serve: 1. Place cooked yellow noodles in a bowl. Ladle the hot gravy over the noodles. 2. Top with bean sprouts, fried tofu, chopped lettuce, boiled eggs, fresh chilies, and vegetable fritters. 3. Squeeze calamansi lime juice and add 1-2 tsp of white vinegar. Serve warm and enjoy! Yellow Noodles Recipe Ingredients: * 250g high-protein flour (bread flour) * 1 egg * 1/2 tsp salt * Turmeric powder or food coloring (optional) * ~60-150ml water (adjust as needed) Method: 1. Mix the Dough: In a large bowl, combine the flour, egg, salt, and turmeric powder (if using). Gradually add water, adjusting based on the size of the egg and the flour brand. Add the water slowly and knead the dough until it becomes soft but not too soft (it should be firm enough to pass through the noodle machine easily). 2. Rest the Dough: Cover the dough with a damp cloth or plastic wrap and let it rest for 30 minutes. 3. Prepare for Rolling: Divide the dough into 4 equal pieces. Flatten each piece slightly with a rolling pin and coat it with a thin layer of cornstarch to prevent sticking. 4. Roll and Cut the Dough: Pass the dough through a pasta machine, starting with the thickest setting and gradually decreasing the thickness to your desired level. Use the noodle cutter attachment on the pasta machine to shape the dough into noodles. 5. Cook the Noodles: Bring a pot of water to a boil. Add the noodles and cook until they float to the surface. Remove them with a colander and drain well. 6. Coat with Oil: Transfer the cooked noodles to a large plate. Drizzle with oil and mix thoroughly to coat the noodles evenly. 7. Serve or Store: Let the noodles cool and serve immediately, or store them in an airtight container in the refrigerator for up to 1 week.
