This is a fun , informative and salivating video if ever there was one, James and Karla. Yes, it's important to support local business throughout the city...especially if there's an outstanding bagel shop as Tompkins Sq Bagels. You know, if my university had offered the MBB ( Master Bagel Baker) degree , i would have gotten that instead of my useless MBA diploma; a lot more appetizing studying for it , that's for sure. I'd love to visit this bagel shop someday when the international borders open. I love twist given to the bagel dough and how loaded they are with toppings. I'm making homemade bagels right now, they are resting/rising in the fridge now then I'll boil, top and bake. I don't have the wooden planks :)

Other places that make bagels only bake them and they have a different consistency and texture. To us, nothing beats a true New York bagel and Tompkins Square Bagels are the best! @@JamesandKarla I think it's a good idea but to be frank it might be tough going. Speaking for myself, I've been unemployed for several months and the prospect of returning to work is slim as I expect the economy to take another turn for the worse as the infection rates start to surge again. The weekly stimulus will end before August and that will make things even worse (not to mention the moratorium on evictions). If you can start one at minimal expense to yourselves it couldn't hurt but I'd keep your expectations low for the immediate future.

The entire process of producing bagels is incredible! Who would think they used brown sugar! What great prices for all the efforts put into the bagels! Nice seeing how you guys support local businesses! ( my mouth is watering) 👍

Prin Riggins we thought it was incredible too as we had never really seen the process in such close detail. And yes we were surprised about the brown sugar instead of regular sugar as an ingredient and are sure that is one of the reasons why the bagels taste so good as brown sugar is certainly more flavorful. We absolutely love to help support our local small businesses and plan to feature more places. By the way, since you regularly watch snd comment we would value your opinion on whether you think we should start a Patreon page for people to help support our channel. We definitely would love to purchase a better mic and wireless mic system so our audio can be better in noisy places like restaurants. This shop had so many Central A/C vents and fans that it was difficult to obtain clean audio.

This is by far the best video I have seen, about bagel making. I was expecting you to mention the boiling phase in your other video, in which you explained the difference between Bagels and Bialys. Boiling bagels prior to putting them in the oven is a major difference between Bagels and Bialys making. Again, great video!

Tompkins Square Bagels must have opened long after I personally stopped being able to traipse around that area, which was in the 1980s, because if they HAD been there I would have become a regular very quickly. Instead I went to the bagel place on Sixth Avenue & 8th Street, and Six Avenue and 13th Street. Oh, and the one on 14th Street near West Street. They were 24 hours!

Great video! I'd always thought Ess-a-Bagel on 1st and 20th was the best, followed closely by Utopia in Queens, but I'll be sure to head to Tompkins next time I'm in town.

We have had Ess-a-Bagel and they are good but still think Tompkins Square Bagel has them beat. We have not tried Utopia in Queens and now are curious about the shop. @@JamesandKarla Stopped by Tompkins on Avenue A and grabbed a dozen bagels and scallion cream cheese. Excellent bagel..honestly, between them and Ess-A, it's a toss-up. Also, Chris is terrific!! Staff at Tompkins just as nice as Ess-A. So, now I'll have to hit BOTH on my trips into town. Thanks for the suggestion!

Renee you definitely should try their French Toast bagel with the birthday cake cream cheese. It was absolutely amazing! We hope you are staying safe and healthy in Dallas. Things are slowly improving here in NYC with stores beginning to open and restaurants now allowed to have outdoor seating only but we agree that it may be a whole before it is safe to travel again. We will keep highlighting unique small businesses so that you will have lots to visit when it is finally save to do so. And Hudson sends big paws 🐾 up and kisses to you in Texas!

I´m not a bagel fan, but I remember this shop...there was always people outside! It was a few blocks away from our airbnb. Just around the corner, on East 10th street there was a small japanese stationery shop. Lovely spot...but I´m afraid it has closed for good because of the pandemic (damn you Mr Covid!).

Yes Christian, in “normal” times, this bagel shop was super busy. Sadly now with so many people leaving the neighborhood, business is slow. We hope it survives as they have amazing extra good bagels! We know the lovely Japanese stationery store you mentioned. We will have to check if it is back open now. Stay safe and healthy and hoping to see you back in NYC as soon as it is safe to travel again.

James and Karla We are hoping for ‘normal’. The same happens here in our neighborhood, our city and our country. Small shops are suffering great losses and a lot of them are going to close for good. We live in a very quiet and beautiful place of Buenos Aires, and during the last few years was blooming with beautiful restaurants and tiny shops. But some of them are in serious danger (if not definitely out of business). But we are used to big crisis scenarios, let’s keep our hopes high...please!

Thank you so much for the love 💕 We definitely can visit again once it reopens but sadly that won’t be anytime soon as NYC just announced today that they WILL NOT allow restaurants to reopen indoor dining even at half capacity, which was supposed to begin in just a few days. This announcement was done for health concern reasons as although Covid infections are down drastically in NYC, t by yes are spiking elsewhere in the country

We couldn’t agree more with you. Sadly we have heard that many of the buildings which have empty storefronts in them are owned by large real estate holding companies and they get a huge tax write-off for their empty storefront so they would rather keep them empty rather than rent them at a reduced or more reasonable price.

Once I was interning at an office in New York and they sent me out for bagels. I thought I could pick up some cheaper bagels and save money and they'd never know the difference. But they could tell right away. "These aren't New York bagels. These bagels are made in -San Antonio?!"

Such hipsters making these videos I can tell they not from Nyc. Ima be honest the water doesn’t make the bagel that’s a bullsh*t lie that they sell for you to get it from their business. You can be Nebraska or w.e and have an amazing tasting bagel you just need to know how to cook them.

Hi @FrankV I (Karla) am a born and raised New Yorker and definitely recommend the delicious bagels from this shop. The owner himself stressed that the key to making a great bagel is in the labor-intensive process of hand-rolling them and boiling them before baking. Many people talk about the water in NYC but if you watch the video, you will see that the water is NOT even mentioned as being crucial.
