Probably because they run with his rich bastard character without trying to pretend he's anything more most of the time. We know the drill with Family Guy now, one of the characters (Peter, Brian, Quagmire, Lois etc) does something stupid or assholish and pisses people off. They realize they crossed the line, give this 'I'm sorry I did that, please forgive me' moment, then next episode they do the same stuff again. Carter has fun with being an asshole and loves it. And when he does have a sincere moment like when he almost was divorced from Babs, it showed that he does realize how out of touch he is and needs someone of his own age. If anything his out of touch, old fart nature works more for him still being a jerk since he's too set in his ways to not be a dick to younger/poorer people.
