It is actually from Pakistan (the spice). I think they call it that cause it "tastes" like it? I tried Bombay Biryanni using Indian spice mix (MDH etc), and they didn't turn out well. I think when it comes to Biryani, Pakistan makes the spicy version. Indian restaurants in my area make less spicy biryani (in USA, NC).

Nice recipe! I also love to tweak store bought masala to add that home taste! 😋 You mentioned you get nervous cooking rice on dum because they don't turn out fully cooked. The reason is you have to leave some water in your masala (the shorba part) to create enough steam to fully cook the half boiled rice. If you put half boiled rice with fully bhuna hua masala, that's what leads to kachay chawal, because there is not enough water to create enough steam. So try leaving about 1/2-1 cup of water(depending on how much rice you have) in the masala and that will create the moisture needed during dum to cook that rice fully👌 (that is also why the boxed recipe calls for extra water and yogurt) Hope that helps incase you wanted to attempt the dum version again🙂 I'm going to try this recipe for dinner today! @@riamosalice I personally think the flavors are better when you cook about 80% cooked rice and masala on dum. But it depends on your comfort level of cooking parboiled rice. My tip is more for people who will be following the Shan box recipe exactly word for word, because like I mentioned the extra liquid from the water and yogurt will help in fully cooking the rice in dum. And they absorb more flavor. If you feel more comfortable cooking the rice completely then definitely adjust the water and yogurt like she did in this video.

Watching the video made my day, Thank-you ji. Loved the instructions with mixing of spices and languages, just like my youngest daughter. I used to make my biryani just like you do, now I use the oven (marinated chicken, fried onions, etc. + 50% cooked rice: 450F 20 min, 400F 40 min)

I made it for dinner Last night. I did some changes. I did the marination part a day before. 500grams chicken, Biryani masala, ginger and garlic paste, yoghurt (I used one cup) and some fried onions, with some cooking oil and let it sit in the fridge overnight. It turned out so good. I added keora Water. It smelled so nice. I cooked it on dum using a griddle on low heat. It didn't burn at the bottom at all. Thank you for this video upload. Love from Fiji 🇫🇯

Great video... being from the Caribbean I am always willing to try new dishes. I have tried biriyani before but I am going to try this version. A helpful tip... rinse the chicken with water and then in the same bowl put chicken, full with water and squeeze juice of 1 or 2 lemons, wash chicken and drain. It helps with the meaty smell.

Thank you so much for making a detailed video with lots of good information and tips. Most Pakistani food channels don’t give enough information and thanks to you I was able o make biryani for the first time!!! However, by adding the whole packet (in whole chicken), the masala became too strong and spicy (I didn’t even add extra chilli). Hence I would recommend to some people to not use the whole packet

The main purpose of making this long vdo was to actually help those newbies who need to understand the technique rather thn recipe. Because recipe for biryani almost remains the same but its the techniques and right way of doing it makes the difference. Yes, we like the biryani spicy thats why the full packet works for me. But lemme tell you a little tip to fix it, just by adding more rice you can fix the spice issue(if its too spicy for you). Add 4 cups rice instead of 3. I tried Biryani for first time here in the US. I followed the steps in "Sindhi Biryani", it turned out pretty good; however, it was one time success. I will try this out even though I prefer pre-mixed riced with spice. Also, another thing, I use the best quality rice at the Indian store. I am not sure why but each type of rice has its own cooking method but fully cooking the rice seems to be a good method.
