If you dry your cod well, then season, coat and air dry for about 30 minutes to an hour, your cod will not fall apart. It will still be flakey and succulent inside but nice and crispy on the out. But mainly it won’t fall apart when you pan fry it. And pan fried is still really the best way to cook it and keep it moist and flavorful. I use shallots and white wine to finish this dish. Lemon is optional after that. Any left overs of cod and potatoes can be mashed into cod patties the next day.

I buy 2 pieces each of haddock and cod and I freeze them. I keep a few cans of stewed tomatoes in the cupboard. I open a can and let it get real hot and then add either the frozen haddock or the cod and poach it. When it's done I use a slotted spoon and put some of the stewed tomatoes on top of the fish after I have placed it on the plate. It tastes great.

Looks delicious, ideal for fish from the fish-shop. I prefer mine with it's own delicate flavour, cooked within hours of being caught. No salt/pepper/other contaminants, just lightly floured, gently fried. I discovered fresh fish when I started sea-fishing; it is infinitely better than store-bought, and a different experience.

Your palate expects fish to taste of 'salt-n-pepper'. Be brave and think for yourself, try it un-seasoned; you may enjoy your fish even more. Some foods need seasoning because they are bland without; other foods like fresh-caught fish have delicate flavours that do not need anything additional.

When you flip that fillet you should swirl the oil in the pan before resting the filet back in it. Looks great and I have some individually wrapped fillets in the freezer that are going into some cool water to thaw as I type.

I actually used your recipe last night with fresh caught cod fillets. Man, it was delicious. I think the key cooking guide is not moving filled for the 3 1/2 minutes, then turning once and removing in one gentle lift. But, was excellent. I followed recipe exactly including potatoes, but next time will pre-cook potatoes and reheat same time as fish being prepared so both items plated within seconds of the other and served.

That’s the same technique I pan fry cod with potatoes too, only difference is I use pork fat instead of vegetable oil and butter. I also make scruncheons small pieces of pork fat cut into 1/4” cubes and fried till crispy then pour it all over the cod and potatoes. This is the Newfoundland way of doing pan fried cod.
