Not alot of people know about our tasty saudi food.......I don't know if your recipe is a variation of the traditional recipe... but I believe in the traditional recipe they use a grain called in English "pearl barley". Also, rice is not added. Thank you for uploading :)

Hi there, my recipes are the Traditional format, however depending on the region your coming from, each one has their own version. My versions are hijazi since im from the Western region. Regards

Hi Eman, I have seen you sharing recipes with Alia. Now I am also suscribed to your channel. I have a couple of questions. Can I use juniper berries instead of leaves? (I happen to have the berries); can I use barley instead of rice? (I have a mild alergy to it and try to avoid it as much as possible). By the way, nice music. Thanks for sharing.

The “juniper” is actually wormwood which is different though the plant itself may look similar to juniper. Btw I would also try the recipe with a different grain profile (oats?) due to gluten allergy but not sure how this might change the result

It is an ingredient that was used. It looked like a grain/seed (similar to barley in appearance). It was used in a middle eastern soup made by an cook from Iran, or Iraq.

ruby slippers it's almost the same, except that bulgur might be easier to use if you don't have a pressure cooker, she used (I believe) harees. That needs to be soaked over night but it's same family of cracked wheat. bulgur is used to make kibbeh mostly. :)
