Recipe
300 gms strawberry pureed
300 ml milk whole
300ml double cream
100gms sugar
3 egg yolks
some extra strawberries for garnish and strawberry puree sauce to top.
tips- after mixing egg yolk and sugar always pour just a little hot milk in it and quickly mix it then continue to steadily pour the rest and mix simultaneously. if the milk is hot the yolk will cook quickly and save cooking time on the stove.
there is curdling risk while cooking on the stove. so make sure heat is low and stir continuously or use a double boiler .
chill quickly to prevent scranbling of egg and you are guaranteed a smooth flavoursome icecream.
