The Kegani is called the "horsehair crab," not "horseshoe crab." Horseshoe crabs are a completely different species of arthropod, and are called "living fossils" because they predate the dinosaurs by hundreds of millions of years. Love the show!

11:35 that's not how you eat it Sonny! You're supposed to cut off the bottom part of the crab (the part you closed up), and separate the top shell from the body, then cut down the middle of the body. You can then scoop out the top shell of the crab, and enjoy the body separately

With these Hairy Crabs 🦀, you should REMOVE the lower carapace shell of the crab, before eating due to its unsafe and unsanitary sediments that may remain inside that lower carapace. In rivers and rice paddies throughout Asia, these crabs remove or discard their eggs in sandy / dusty river beds, and as a result, sand or mud could remain in the lower shells of these Hairy Crabs.🦀

Bro, when I temporarily lived in Guangzhou, Guangdong, China, my wonderful Chinese host family took me to every restaurant you could think of, some of them very expensive. And they wouldn't let me pay! I had no idea there were that many types of crabs and shrimp and lobsters out there. Even ate sweet urchin! Man, this is the BEST video.

Mud crab is the best. When I was a Chinese cook in a country town in Australia, the locals used to bring the restaurant owner crates of live mud crabs. Funny thing, we ate them and they didn't ever go on the menu. We used to cook them with a black bean sauce. 😊😊

Hairy crab is a highly seasonal delicacy. It is the best during October to December and the best is produce in Suzhou China. In July, when the Crab tomalley melted, it is another taste.

Hey I'd love to see you do more episodes on eating invasive species. Lionfish, green crabs etc. I feel not enough people are aware about eating these invasive species, and thus they aren't really in demand, where if they were wild caught and in demand it would really help curtail their numbers.
