🐦DEEP FRIED PIGEON: In a hot wok, deep fry pigeon until the bird turns golden brown. Serve when ready.
🐖BLACK PEPPER PORK HOCK: Torch the pork hock to burn the remaining fur and slightly cook the meat. Second, steam the hock with five spices and soy sauce for 2 hours. Prepare a hot wok and stir-fry chopped onions. Prepare a plate with cabbage and place the steamed hock on it. Add the stir-fried onion. Finally, pour the black pepper sauce on top and serve.
🦆DEEP FRIED DUCK TONGUE WITH PEPPER & SALT: In a wok, stir-fry the duck tongues until they turn golden brown. Second, add garlic, red pepper, and spring onion in the wok and stir-fry. Add the duck tongues in the wok along with salt, sugar and chili oil. Continue stir-frying, then add fried garlic and cashews. Take everything out when it's done and serve.

🐟FRIED WHITE RICE FISH WITH BUTTER & CHEESE: Place the fish in a bowl with chicken broth and cornstarch. Fry the fish in a wok and then remove when ready. Add butter and cheese in the wok and then add the fish. Stir-fry mixture and then serve with soy sauce.
🐔DEEP FRIED CHICKEN CARTILAGE/KNEES: Place the chicken knees in a bowl with cornstarch and then deep fry. Remove from fire. Add chilli and chicken knees in the wok and stir-fry for 10 more seconds. Serve with soy sauce.
🌊STEAMED RAZOR CLAMS WITH MUNG BEAN NOODLES: Cut the clams open and take out the flesh. Add mung bean noodles and garlic oil on the clams and steam them for 5 minutes. Serve when ready.

It just strikes such a good balance between showcasing the food, but also putting it into both the historical context and the current political situation, without getting overly preachy or anything like that either. Thank you for including the traditional recepies. I truly hope the government is reconsidering the current licensure laws. It would be tragic for the citizens of Hong Kong(and the world) to lose their. Livelihood and such a unique food culture and family traditions. It has deep value to the cultural identity of the city as well as being a draw for tourism and chefs from all over the globe who experience Dai Pai Dong food methods then share them with their home country. A homogenized Hong Kong is not a positive change for anyone(citizens or government). One of Hong Kong's main appeals is that it is a cultural Hot Pot of people and traditions. If that is tragically lost, them the draw and wonder that is Hong Kong will be too. These archaic laws being upheld and new more stringent laws and controls, will only destroy the very eessense of the city and its people from within and erode away the city at it core leaving behind an empty hollow cement shell. Sadly then there will be little left for anyone to appreciate.

Just got back from Hong Kong for the holidays, and we weren't able to visit Dai Pai Dong because of the protests. We were wary of what was happening and always on the look out. We went to Mong Kok and Cheung Chau though for the street food and seafood experience. Will go back in the summer to experience this gastronomic experience. Some tips from me: [Protest-wise] -Stay away from the New Territories and Kowloon, it's better to stay on Hong Kong Island -Check the news for the traffic situation -Don't go near the protest areas, they like moving from place to place -Don't try filming them or taking pictures -Don't stay out late -Avoid big malls if you know they'll be nearby -Don't attend the protests, they're often violent (also illegal, and they disrupt day-to-day life) [Food-wise] -Try out the local street food (stinky tofu, curry fishballs, siu mai, bubble waffle, egg tarts, etc) -Try the milk tea or the yin yang (half coffee, half tea) -Instead of Disneyland, go to Ocean Park -Go to a Tai-Hing for char siu rice or roasted meats -Bubble tea -Try a pacific coffee instead of a starbucks And lastly: -Understand the situation fully before you try to make a viewpoint At least you didn't come here during the more serious riots (Mid July- November)

This reminds me of when I was stationed in Yongsan, South Korea. It is right in the middle of the shopping district known as Itaewon in Seoul. The street food scene at night was insane! You could get what ever ethnicity of food you wanted. Good times and good memories of walking back to base and stopping to get something to eat after a night of bar hopping. If you ever go you have to check out Geckos Bar and Grill if it still exists.
