Hi Beth. Thank you for sharing this recipe. I was really looking forward to it. I want to try it soon but before I do I have a couple of questions. One: If I want to bake the souffle in 8oz cup ramekins, how long should I bake them and what temperature? And two: can I leave out the nutmeg and the mustard? Will it make a huge difference? sure you could temper them but I find that if you let the sauce cool slightly and add them while whisking, there's no need :) So glad you enjoy the videos Stacy! Really appreciate the support :) xx

I made this for dinner on v-day!!! delicious. I whipped the egg whites by hand and used about a tablespoon of white vinegar. It turned out great! My arm was tired after two minutes of whisking a super clean glass bowl, but it was well worth it! I followed the recipe to a T otherwise.

Oh sure that would be great! Just cut into tiny pieces so it doesn't weight down the souffle and prevent it from rising. Or you could add a veggie like spinach too :) Enjoy!

Hi Byron! I love blanched green beans cooked just to turn green so they still retain their crispness, and then served cold tosses with a nice lemony vinaigrette! :) Yummy!

Oh sure you could use Monterey Jack, Blue Cheese, Goat Cheese, Parmesan. I would just stay away from Mozzerella or Provolone which might be too gooey and weigh down your souffle too much. You could also serve this with some sauted carrots, or steamed spinach, ratatouille or even some roasted tomatoes would be lovely too. Hope you enjoy!

Hmmm great question! I think it would if you used an all-purpose GF flour like the King Arthur Brand or Bob's Red Mill. Not sure about just corn flour?

sure for cream of tartar you could sub with 1/2 tsp of fresh lemon juice or 1/2 tsp plain white vinegar. Can I ask where you are from and I could recommend a cheese? :)

You didn't actually tell us how to tell if it's done. Everyone's oven is different, so it would be really good to know how to tell if it's done or not.

This separating and beating the egg whites does not have to be done. A souffle is now the easiest recipe in the cookbook...thanks to Jacques Pepin. Simply beating the eggs and tempering them into the bechamel with cheese and so forth, is all you need to do. The mixture can also be done ahead of time and kept in the fridge or frozen in the freezer..(yes that's right) until you plan on cooking it. Once you do cook it, there will be no discernible difference in the finished dish.
