In this video, Betty demonstrates how to make Riced Cauliflower Parmesan. This recipe explains how to fry frozen, riced cauliflower in a way that makes the dish look and taste somewhat like fried potatoes. It is an excellent side dish!
RICED CAULIFLOWER PARMESAN
Ingredients:
* 1 to 2 tablespoons olive oil -- more, if needed
* ½ large white onion, washed and chopped in cubes about the same size as the riced cauliflower
* 1 teaspoon table salt, or to taste
* 1 teaspoon freshly ground black pepper, or to taste
* 2 (10-ounce) packages frozen riced cauliflower
* ½ of 8-ounce can of Parmesan cheese
Instructions:
Heat 1 to 2 tablespoons olive oil until very warm (not smoking). Add ½ of a large onion, chopped. The oil should sizzle, but not be overly hot. Sauté the onion until translucent and lightly browned around the edges. Place sautéed onions in a bowl and set aside for a few minutes. Meanwhile, add an additional 1 tablespoon of olive oil to the empty skillet. Heat until very warm, and add the 2 packages of frozen, riced cauliflower. Break cauliflower apart with a spatula and stir to coat with oil. Sprinkle with salt and pepper, to taste. Cook over low heat until cauliflower is broken apart and beginning to soften. Add sautéed onion and continue to cook for about ten minutes, stirring occasionally. Sprinkle with about ½ can of Parmesan cheese, or to taste. Cook another ten minutes or so. Spoon Riced Cauliflower Parmesan into a serving bowl. Sprinkle with additional cheese, if desired. Serve while hot. I think you will love this side dish that is very healthy and tastes great, too!
