In this video, Betty demonstrates how to make Sautéed Squash and Grape Tomatoes. This is a colorful dish that looks inviting on any table.
SAUTEED SQUASH AND GRAPE TOMATOES
Ingredients:
1 medium zucchini squash, cut in half, vertically
1 medium yellow summer squash, cut in half, vertically
1 pint grape tomatoes
2 tablespoons olive oil
salt and pepper, to taste
Betty’s Italian Dressing for Vegetables (previous upload; optional)
Instructions:
Slice zucchini halves and yellow squash halves vertically into 1/4 -inch slices. Slice grape tomatoes into halves. Pour olive oil into a medium-sized skillet and heat for a few minutes over medium heat. Do not let the oil get hot enough to smoke. Add the sliced zucchini and yellow squash to the heated olive oil. Sauté squash until tender and beginning to brown. Add sliced grape tomatoes to skillet, bringing them up to the heat of the sautéed squash. Stir each vegetable only lightly, so as not to mix them together. Remove the vegetables in groups--the zucchini, the yellow squash, and the grape tomatoes--keeping the groups of vegetables separated. Place each group of vegetables attractively on a clear plate. Serve immediately. Serve with Betty’s Italian Dressing for Vegetables, if desired. This is a pretty dish, and is also healthy and tasty.
