Hello Betty. It's wonderful to see and hear you back on your channel. I've missed you. Today's the day after Thanksgiving and I had already begun making my list of things make to Christmas. We all love cucumbers here, they grow like weeds in our garden, so I know my family will love this, (and myself). I have made cucumber sandwiches for baby and wedding showers I've given but don't understand why this recipe isn't prevalent here as well a cucumbers growing so good. I'll let you know how mine turns out. May do a test run before Christmas arrives. Hope you are doing better, you're in my prayers. Much love, Linda D.

Benedictine Spread or dip is a Kentucky home grown recipe as you know, most viewers probably are not familiar with this tasty treat. I have always super finely grated my Cucumber. This way looks awesome with better texture. Very good on Pumpernickel bread. Thanks for sharing.

A potato ricer would well to squeeze that water out of the cucumber. I use potato ricer to squeeze water out of cooked spinach.

You should get some of those cheese bags that are used to drain cheese of excess whey. You could squeeze the cukes and onions more easily and not waste so many paper towels. Thanks for the recipe idea!

Instead of using green food dye, use spinach in your recipe to make it look greener. When I saw the thumbnail I really thought this was going to be a sugary recipe.
