Betty demonstrates how to make Light and Fluffy Waffles. These are traditional waffles that can be topped with butter and maple syrup, or one of three recent toppings from Betty's Kitchen: Blueberry Syrup, Strawberry Syrup, or Caramel Syrup.
Light and Fluffy Waffles
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 eggs, separated
2 cups buttermilk (I used 2 cups milk plus 2 tablespoons lemon juice.)
¼ cup butter, melted
cooking oil spray
In a large bowl, mix together 2 cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. In a medium bowl, mix together 2 eggs yolks, 2 cups buttermilk, and ¼ cup melted butter. Add liquid mixture to flour mixture. Use an electric mixer on medium speed to mix until smooth. Beat egg whites with an electric mixer on high speed in a small bowl until stiff peaks form. Gently fold beaten egg whites into batter. Bake in a preheated waffle iron that has been sprayed with cooking oil spray. When waffles are beginning to brown, remove them to a large plate. Continue cooking waffles until all batter is used. Serve while hot, and pass the butter, and maple, blueberry, strawberry, or caramel syrup! I hope you love these waffles! --Betty ♡♥♡♥♡
