Escanor was chosen by the Grace, Sunshine, at birth. However, the power consumes his life force over time, and breaks his body down. As The One (11:59-12:00) his built up power reaches its peak and is nigh unparalleled save for two known beings. After that one minute was up, Escanor chose to save his friends by sacrificing his remaining life force to power up to The One [ULTIMATE] form, which made him the most powerful being in the series at that point, and allowed him to hold off the Demon King long enough for his friends to come help him and defeat the DK. The One [ULTIMATE] expended his life force though. Think 8 gates in Naruto without any plot or anything being able to save your life after using it. So he literally turned to ash from his power burning up inside him, but at least he got he kiss from Merlin in the end, even though she said she could never return his feelings. Bittersweet end.

so ill explain this plainly: normally, escanors power rises and falls depending on the time of day, obivously peaking at noon for 1 minute. during the fight with the demon king, after the minute where he was basicly invincible, he started sacrificing his life-force to prolong that powers duration, which basicly means he burned himself out... literally...
