Bhai potatos ko boil kare the uske baad fry kiye jitne apne btaye utne hi jab khane lage to bhature ki bite mai lagate lagate hi potatos mash ho rhe the. According to me potatos ko boil na kre directly cut karke fry kro vo mash ni honge..

भरत भाई मैंने आपकी चने/छोले की कई रेसिपी देखी है और लगभग सभी मे मीठा सोडा डालते हो तो मेरा कन्फ्यूजन दूर करने का कष्ट करें, पहला कन्फ्यूजन कि जब सोडा डालकर कूकर का ढक्कन लगाकर उबालेंगे तो सोडे के कारण एक्सट्रा प्रेशर बनने से कूकर की सीटी निकल कर भाग जाना या ब्लास्ट होने जैसी कोई रिस्क तो नही है, दूसरा कन्फ्यूजन कूकर एल्युमिनियम का होने के कारण सोडा एल्युमिनियम के साथ मिलकर कोई रिएक्शन करे तो फूड पाॅयजनिंग जैसी कोई रिस्क तो नही है।

Bharat tea bag ki jagah amla ko grate karke ya mixy mein grind karke daalne se color bhi aa jayega and taste bhi Khatra toh aamchur will not be required. Also, instead of adding baking soda, chole dhoke ek boil de do and keep aside for an hour or half and then only 4-5 whistles will be required.... Baking soda is not good for health

A good cook does not need to to add soda at all .All u need is overnight soaking .This shot cut is used by street/dhabas to sell their food.In 60yrs of cooking I have never used soda in Channa or in any thing Good taste in cooking comes from minimum masalas to keep intact the taste of what one is cooking and cooking on slow flame be it any dal or any vegetable.Today every one sees the u tube recipes and tries to copy .Be original

I tried making dosas since many years, on non stick , n iron tawa. A video shown by you taught us n explained well why our dosa do not get so crispy. In that video u have explained quality of par boiled rice n its chemical structure. Besides shown a thick south tawa exactly as the size of our hot plates usually every home has it. I really admired u sir... n i will try on it to get same result as in south hotels.

baking soda alters the taste of chole masala. The best ever i had was in Jalandhar and the trick is overnight soaking in soft water. They were adamant about not using soda.
