Bibingka refers to a type of baked rice cake that is traditionally cooked in a terracotta oven or clay oven lined with banana leaves and is usually eaten for breakfast or as merienda especially during the Christmas season.
Now you can cook and eat this even you don't have clay oven. In this video, I will show you how to cook this in two ways without using clay oven. I hope you enjoy and satisfy your Bibingka craving.
Ingredients:
1 cup glutinous rice flour
1½ cups rice flour
4 tbsps. baking powder
½ cup white sugar
½ tsp. salt
1 cup evaporated milk
1 cup coconut milk
4 pcs. eggs
¼ cup melted butter
1 cup grated cheese
Topping
salted eggs, sliced (as desired)
butter
cheese, sliced or grated
grated coconut
Note: ***You may use parchment paper to line your baking pan but I strongly suggest that you use banana leaf. Banana leaf really gives that nice Bibingka aroma and flavor.😍
