Bibingka commonly refers to a type of baked rice cake from the Philippines that is traditionally cooked in a terracotta oven lined with banana leaves and is usually eaten for breakfast or as merienda (mid-afternoon snack) especially during the Christmas season.

Ingredients:
Porridge (lugaw) mixture:
1 cup rice flour
4 cups water
Main ingredients:
7 cups rice flour
2 1/2 cups sugar
25 grams fresh yeast or 1.5 tbsp dry yeast or 1.5 tsp instant yeast
2 tbsp baking powder
5 cups coconut milk
Note: for smaller amount of bibingka just divide the ingredients...
