Wow, I wouldn't consider those prices at Bugsy & Meyer's "moderate". Maybe by Vegas standards, but there is no way I would have paid 35.00 for that single crab leg or 17.00 for a baked potato. I'm glad you guys enjoyed it. Stay safe in your travels, love your channel!

@@fredkapp498 I completely agree with you Fred. It's why I don't go to Vegas anymore. $20 for a cocktail. $17 for a baked potato. Bill's rib cap was $90 (I know it was prime beef, but still...) That's just insane.

Fun fact: Wet aging beef is best between 30-60 days in a refrigerator. That means you didn't get the peak of the process! Also, wet aging enhances the flavors of the cow's diet; verses dry aging enhancing the general taste of beef. So if you wet age a corn fed beef steak, it'll be very sweet! Where as a grass fed steak will have the sweetness as a small note of flavor. Both can be done at home, but wet aging at home takes more time and a hope you don't forget about it being in the fridge.

Hey Bill if you like Patty melts sometime you should try what I call a patty melt Ruben at the restaurant I worked at we would add grilled sauerkraut but where it's really translucent with the grilled onions and then top it with some Thousand Island dressing really good

The rib cap is the Spinalis Dorsi. The only part of a cow better than the filet! I really enjoy your videos! Hello from Maryville Tennessee!

While the fillet is always a great choice, I think one of the most special cuts (besides the spinalis) is the hangar steak (also known as a flat iron, butcher steak, or butler cut) because there is only one per cow. The reason it's been called butcher steak or butler cut is because many times butchers and butlers would keep that single delicious cut for themselves.

It reminds me of when me and my wife went out for our first date, she does the same thing. It must be a Philippino thing, She is from northern Phils.
