Binging with Babish: Chicken Fingers from Community

During my weekly re-watching of Community, I was reminded that an entire episode was dedicated to the study group's Goodfellian pursuit of chicken fingers. Needing a break after last week's culinary marathon, I jumped at the opportunity to brine some tendies in pickle juice just to see what happens. Turns out, it tastes real good! Thanks Greendale!

It's a weird myth because the only pickles that are involved with anything is on the sandwich....we used to get in trouble for frying pickles for ourselves because it could contaminate the oil...so I assure everyone no pickles

Corn flake crumbs make for an amazing texture for breading. My mom exclusively uses corn flakes for croquettes and milanesa, which is basically a Latin American version of schnitzel. I don't know common it is outside of Southern California, but you can get pre-ground cornflakes, which is convenient if you're using it for breading, because an entire box of whole corn flakes results in a fraction of what you would expect when they're ground.

Had a friend that worked for Chick-fil-A for years and asked him about the inclusion of a pickle juice in their recipe. He told me at no point in the breading process do they add pickle juice. The real pickle flavor comes from when they put pickles on and seal the sandwiches in the bag which steams them

Great video. Chick fil a doesn’t use pickle juice in their marinades anymore though. Our chicken comes frozen and pre marinaded, then we dunk it in “milk wash” which is just a powdered mix you add to water, then gets coated once and fried in peanut oil. Our coater also comes pre mixed but the marinade, coater, and pickles all have msg in them.

Worked at a cajun/creole place where we did fried chicken in beef tallow fryers. Best chicken I've ever tasted, and the fries that came out of that fryer were next level too. Mixing blackening spice into the dredge was great for extra flavour too.
