Kosher salt is basically salt that doesn't have iodine in it which can leave an odd taste in food. The reason it's called Kosher salt is the shape of the salt crystals makes it perfect for drawing moisture from meat which is part of the koshering process.

pre shredded is coated in potato starch actually. And when you're going to use something in a really quick time frame (in this case within 5 minutes lol) its fine to add cornstarch.
