This week, the Babish Culinary Universe is going through a serious cheese phase. No, I'm not upset about it either. Pop a lactose supplement and lube up your favorite frying pan, because we're about to make taco night look like a punk.

Ingredients & Shopping List
For the chicken quesadillas:
Sharp cheddar cheese, grated
Monterey jack cheese, grated
3 chicken breasts, butterflied and pounded thin
Flour tortillas
Sauteed peppers and onions (optional)
2-3 Tbsp oil per quesadilla
Guac, salsa, and sour cream for serving
For the chicken marinade:
2 Tbsp vegetable oil
2 garlic cloves, crushed
1 tsp oregano
1 Tbsp cumin
1 tsp cayenne
1 tsp paprika
1 tsp white sugar
1 lime, juiced
1 Tbsp olive oil
1 tsp kosher salt
1 tsp freshly ground pepper
For the steak quesadillas:
1 skirt or hangar steak
Salt and pepper
Vegetable oil
Diced onion and pepper (to cook after the steak)
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
For the vegetarian quesadillas
1 zucchini, finely chopped
1 can corn, drained and rinsed
Vegetable oil
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
Fo the guac:
2 avocados
1/2 small red onion, finely chopped
1 large jalapeno, seeded and diced
2 cloves garlic, grated
1 lime, juiced
Cumin, to taste
Salt and pepper, to taste

Micing it makes it icky and moist. You can just throw some cheese and a tortilla in a hot skillet, without oil, and it gets nice and crispy, and not a greasy mess.

IMO, the highlight of this video is him teaching people how to make chicken breast. I've struggled with them and had kinda given up on them until this video. Let me tell you, the butterfly, smash, marinade, and really hot cooktop are next level. It's crazy tender and isn't dried out at all. Freaking delicious.

Cooking chicken at a higher temperature for less time is a great way to keep it juicy, same goes for when you're baking chicken too.

Collin i also like YSAC’s method: dry the chicken, cover it in olive oil and salt and pepper, then put it in a 450 degree oven for like 10 minutes. super tasty, super juicy edit: this is a no-butterfly method

No offense, but... You needed instruction for that? It's rather obvious that when as you increase temperature the insides of whatever you're frying get increasingly more raw assuming you get outside to similar states. If it's overcooked it will be dry. So if you get anything dry when frying, just fry on higher heat next time, and vice versa, if it was too raw just reduce the heat. It's sth I learned on my own when I was 15 lmao.

"Half quesadilla" :o? In Mexico it's not a quesadilla if you don't fold it. If you do two tortillas with stuff inbetween it becomes a sincronizada.

Hey man! Love the channel. I have been living in Mexico for almost 5 years. The vegetarian quesadilla is very authentic you should try adding courgette/zucchini flowers to your mix, it's delicious.

Definitely fry the quesadillas in butter instead of oil. I also like to put a little bit of sauce in mine; a decent knock off of Taco Bell's creamy jalapeno sauce: mayo, sour cream, cumin, minced jalapenos and some juice from the can, salt, black pepper, garlic powder and onion powder.

But then again the internet is where you can hate apples and be accused of hating oranges, by association. Plaster of paris has been linked to decreased gut mobility in the pyloric region. I would rather not place anything in my stomach that has even the remote chance of forming a gastric bezoar. Then again I eat meat and have no use for tofu.

fun fact! in el salvador a quesadilla is actually a sort of cheesy bread that has a consistency kind of like cornbread. if you ever want to try something new, i would definitely suggest looking into some salvadoran cuisine! Quesadilla Salvadoreña, Chuco, Pupusas, and Tamales Salvadoreños would be super fun to watch! Or maybe sweets like Semita or Horchata Salvadoreño. It could also make for a fun episode about the differences between Mexican cuisine and Salvadoran cuisine of the same name!

Protip: when slicing the quesadilla, never make all the cuts back to one point. Leave a half inch between each cut. Why? so that you leave the "fold connected" to all the slices, making them easier to eat.

I have made these at least once a week for the past 5 years. I found putting onion flakes, and red pepper flakes, and salt really brings flavour and spreads it to where the ingredients don't go. I put a dollop of sour cream right in the center and drizzle the sour cream in a medium spiced hot sauce. I used to use Franks but switched to a Pineapple Habenero sauce I found on Hot Ones. I usually cook with butter but may try with oil to see how it tastes.

Just made this for lunch, I have to say this is one of the best quesadilla recipes I've tried!!! Marinating the chicken really made a huge difference in terms of flavor, compared to many other recipes I've tried where the chicken is really bland and you have to dump alot of condiments just to get a kick. The seasoning and the inclusion of lime was just perfect! It added a tangyness to the chicken and speaking of the chicken, it was just juicy, moist and full of flavor!! I'm actually so glad I chose this recipe while I was scrolling through many others!!

I made these (chicken) and they are a HIT! EVERYONE LOVES THEM! I got so many requests for repeat dinners! Thank you! I noticed that when you start assembling them to add some cheese as glue before you add the chicken so you have glue on both sides for a much neater flip when it's time. It stays together.

Rice, small amount of shreded grilled or baked chicken, cheese, corn and green chilli sauce. Do the same exact thing he did, but don't use oil, because tortilla already have enough fat in them to prevent burning for quesadillas Filling and perfectly healthy, if maybe a little high in sodium dinner! Just make sure you keep the ratios right, don't load it up with cheese/sour cream and don't fry it!

Miles Holder Those kinds of peppers are only bred for spice. I find that the spicier the pepper the worse the flavor. As a guy who grows his own peppers and makes his own hot sauce, don’t eat the peppers that are bred for heat. They aren’t worth it and they don’t go well with any dishes.

F A I grow Carolina reapers, ghost peppers, etc. I make hot sauce with them. They have an amazing flavor, they’re very fruity and it really shines if you counterbalance the heat with ingredients in your hot sauce. You’ve just never had good reaper sauce

I’m mexican, and I enjoy your approach so much!! Very fine selection of ingredients presented as a pizza-sized quesadilla slice... Thaaat’s a very joyful way to eat it!! We have different quality versions of the same dishes, here, you displayed a lot of technique to respect high quality southern and northern Mexican flavours, also your sharp knowledge about ‘carne asada’ is a jewel. ‘Taquero’ badge achieved!👏
