Bicol express has chilis and coconut milk as main ingredients, a bit like Thai curry but not the same of course - remove the spicy it isn't real Bicol express anymore. Gwen probably looked annoyed as she comes from the Bicol region of the Philippines. For foreigners someone should make a video of the regions BINI comes from, for a start they have four different native languages - Stacey and Sheena are Ilokanas, Maloi and Jhoanna are Tagalog, Gwen is Bikolana, Colet and Aiah are Visayans - Mikha was born in Aiah's region but moved to Jhoanna's province and spoke English better than Filipino at the start while Colet struggled with Filipino as they speak their own language more where she grew up. Add to that how they came from very different backgrounds. Amazing actually that they manage to be a team with how different they are, but maybe in exactly that they really represent the Philippines.
