I dont know if I would call phosphorylation a posttranslation modification. I would consider it more like turning on / off the protein in a cascade of intracellular messengers,

It is LITERALLY the most important and well studied PTM. Personal opinions don't work here it is scientific consensus, very HEAVILY backed consensus.

I was wondering that too. I wonder whether it has something to do with the ease of finding an open spot to adhere to early on, and the increasing difficulty as concentration decreases / fewer open spaces are available
