Why do they take the bugs in & out of their mouths? What's the point of that?

The chick has to have a good grip on the bug to swallow it. Apparently, their throats have barbs which allow them to grip their food and force it down to the stomach. The parent won't let go until the chick has hold of the bug. You'll sometimes see problems like a parent holding the very end of a worm, leaving nothing for the chick to grab on to. The parent's instinctive responses: try feeding a different chick; shift grip on the bug and try again; mash the bug's head and try again. Other problems: the bug is too big for the chick (head mashing time); the bug has not been swallowed within what the parent thinks is a reasonable time (which can be ~1 second for new, inexperienced parents), and the parent is not putting the bug in the chick's mouth small end first, but broad side (and even relatively small bugs can be longer than the chick's mouth is wide).
