There is a reason that Birria Quesatacos have exploded all over the world, y'all. Birria is a traditional Mexican meat stew that starts this whole delicious thing. That Birria (meat) is then shredded and pan fried in corn tortillas with melty cheese and dipped in consomé (richly flavored Birria broth), absolutely amazing!
