Assalamo Alaikum Everyone!
In this video I have cooked Special Beef Biryani in Karachi Style. This recipe is specially for Bakra Eid.
Key Features of Beef Biryani:
Main Ingredients:
Beef: Marinated pieces of beef, often from a tender cut, cooked until succulent and infused with spices.
Basmati Rice: Long-grain basmati rice, known for its fragrance and delicate texture.
Marination:
Spices and Yogurt: Beef is marinated in a mixture of yogurt, garlic, ginger, and a blend of spices such as cumin, coriander, turmeric, red chili powder, and garam masala. This tenderizes the meat and enhances its flavor.
Cooking Method:
Layering: The dish is assembled in layers, starting with a layer of partially cooked rice, followed by a layer of marinated and cooked beef, and then another layer of rice.
Dum Cooking: The layered ingredients are cooked on low heat (dum) in a sealed pot, allowing the flavors to meld together and the rice to absorb the aromas and juices from the beef.
Spices and Aromatics:
Whole Spices: Such as cinnamon sticks, cardamom pods, cloves, and bay leaves, which add depth and complexity.
Fresh Herbs: Like mint and cilantro, which provide freshness and a burst of flavor.
Fried Onions: Caramelized onions are often added for sweetness and texture.
Saffron and Ghee:
Saffron: Infused in warm milk or water and drizzled over the rice for a golden color and subtle floral aroma.
Ghee: Clarified butter that enhances the richness and flavor of the dish.
Accompaniments:
Raita: A yogurt-based condiment, often with cucumbers, mint, or onions, to balance the spiciness.
Salad: A fresh side salad with onions, tomatoes, and cucumbers.
Flavor Profile:
Rich and Spicy: A complex blend of spices creates a rich and intense flavor profile.
Savory and Tender: The marinated beef is tender and flavorful, perfectly complementing the fluffy, fragrant rice.
Recipe for Beef Biryani:
Ingredients:
For Marinating the Beef:
1 kg beef, cut into chunks
1 cup yogurt
2 tablespoons ginger paste
2 tablespoons garlic paste
2 teaspoons red chili powder
1 teaspoon turmeric powder
2 teaspoons garam masala
Salt to taste
For the Rice:
3 cups basmati rice
4-5 cups water
2-3 bay leaves
4-5 cloves
4-5 green cardamom pods
2-inch cinnamon stick
Salt to taste
For Assembling:
2 large onions, thinly sliced
3-4 tablespoons ghee or oil
1 teaspoon saffron threads, soaked in ¼ cup warm milk
½ cup fresh mint leaves, chopped
½ cup fresh cilantro, chopped
2-3 green chilies, sliced (optional)
Instructions:
Marinate the Beef:
In a large bowl, combine the beef chunks with yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, garam masala, and salt. Mix well and let it marinate for at least 2 hours, or overnight in the refrigerator for best results.
Cook the Beef:
In a large pot or pressure cooker, heat some ghee or oil. Add the marinated beef and cook until the beef is tender and the oil separates from the masala. Set aside.
Prepare the Rice:
Rinse the basmati rice thoroughly and soak it in water for 30 minutes.
In a large pot, bring water to a boil. Add the bay leaves, cloves, cardamom pods, cinnamon stick, and salt. Add the soaked rice and cook until the rice is 70-80% done. Drain the rice and set aside.
Fry the Onions:
In a separate pan, heat ghee or oil and fry the sliced onions until they are golden brown and crispy. Remove and set aside.
Assemble the Biryani:
In a large, heavy-bottomed pot, layer half of the partially cooked rice.
Spread the cooked beef over the rice, including all the masala.
Sprinkle half of the fried onions, chopped mint, and cilantro over the beef.
Add the remaining rice on top.
Drizzle the saffron-infused milk over the rice.
Sprinkle the remaining fried onions, mint, cilantro, and sliced green chilies (if using) on top.
Dum Cooking:
Cover the pot with a tight-fitting lid. You can seal the edges with dough to trap the steam inside.
Cook on low heat for 20-30 minutes, allowing the flavors to meld together and the rice to fully cook.
Serve:
Gently fluff the biryani with a fork before serving. Serve hot with raita, salad, and pickles.
