I am Cuban so been eating this all my life although we put it on top of rice and we don't make it spicy. But this looks really good.

I saute onion and green, red and yellow bell pepper. When I have on hand some minced jalapeno, ( I'm a sissy) and a few crushed pepper flakes, garlic, Mexican oregano, cumin, salt, and some smoked paprika. I also add smoked sausage to mine . For garnish I sprinkle cheese, a dollop of sour cream, diced avocado and sometimes green onion or cilantro and a squeeze of lime juice. If I have them a few tortilla strips. I have been making this a couple times a weeks of late . Perfect for cold weather. Warms you up from the inside out. I could live on this.
