Black pork curry and coconut roti are delicious and popular dishes in Sri Lankan cuisine. The combination of rich curry flavors and the unique texture of coconut roti makes for a satisfying meal.
To prepare the black pork curry, you will need the following ingredients:
- 500 grams of pork, diced
- 2 medium-sized onions, finely chopped
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons of black curry powder
- 1 teaspoon of turmeric powder
- 2 teaspoons of chili powder (adjust according to your preferred spice level)
- 2 tablespoons of vinegar
- 1 cinnamon stick
- 2 cardamom pods
- 2 cloves
- Salt to taste
- Curry leaves (optional)
- Vegetable oil for cooking
And here's a step-by-step guide to make the black pork curry:
1. Heat some oil in a large pot or skillet over medium heat. Add the onions, garlic, and ginger. Sauté until the onions become translucent.
2. Add the black curry powder, turmeric powder, and chili powder to the pot. Mix well to coat the onions and spices evenly.
3. Add the diced pork to the pot and stir to combine with the spice mixture.
4. Pour in the vinegar, and add the cinnamon stick, cardamom pods, cloves, and curry leaves (if using). These spices will infuse the curry with rich flavors.
5. Season with salt to taste and give everything a good stir. Reduce the heat to low, cover the pot, and allow the curry to simmer for about 1 to 1.5 hours, or until the pork is tender and cooked through. Stir occasionally to prevent sticking and ensure even cooking.
While the black pork curry simmers, you can prepare the coconut roti. Here's a simple recipe for coconut roti:
Ingredients:
- 2 cups of all-purpose flour
- 1 cup of freshly grated coconut
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1/4 teaspoon of salt
- Water, as needed
- Vegetable oil, for cooking
Instructions:
1. In a mixing bowl, combine the flour, grated coconut, chopped onion, green chilies, and salt. Mix well to combine.
2. Gradually add water to the mixture and knead until you achieve a soft and pliable dough. Add water or flour as needed to adjust the consistency.
3. Divide the dough into small portions and shape them into balls.
4. Heat a griddle or skillet over medium heat. Take one dough ball and flatten it using your hands or a rolling pin, making a round-shaped roti.
5. Place the roti on the hot griddle and cook on both sides until golden brown spots appear. Brush each side with a little oil to enhance the flavor and prevent sticking.
6. Repeat the process with the remaining dough balls until all the coconut rotis are cooked.
Serve the black pork curry hot with coconut roti on the side. The roti can be torn into pieces and used to scoop up the flavorful curry. Enjoy the delightful combination of flavors in this Sri Lankan dish!
