Hey, very good to see the reach of the black rice into the world. One kind suggestion from me. You should cook hard rice varieties in a different way to retain max health benefits. We grow this variety in my native. I am sharing the traditional way we cook this rice. 1. Wash the rice nicely. 2. Add 1 rice : 4 water and let it soak overnight. 3. In the morning, strain the water in which rice has soaked and bring the water to boil. Add the soaked rice and bring it to boil. 4. As soon as it boils, turn off the flame and tightly close the lid. 5. After 30 minutes, if you open the lid, rice would have bloomed. Use the bloomed rice in all your recipes. Eventhough 1:4 works most of the time, water consumption of the rice to cook will be according to the age of the rice. Adjust the water accordingly as per the result. This method applies to all the hard rice varieties. Hope it would help some. Another excellent pudding recipe with this rice: To 1 cup of cooked black rice, add 1 cup of jaggery/brown sugar. Add a pinch of cardamom powder or 2-3 whole crushed cardomom, 1/2 cup of grated fresh coconut. Drizzle some ghee/ clarified butter. Ready to serve. Wow !!! its a great dessert. My mouth is watering even to think about it. This pudding recipe is from my great grand mother. Its a century old recipe in my native only for black rice.

Bruno Same water the rice were soaked in overnight . You just need to boil it first , then add rice . That’s why strain the water in a bowl first and use same water for boiling and then add soaked rice .

Your recipe looks so delicious 😋. Tnx for sharing. In fact I cooked just now . Taste delicious 😋.I read about how people cook in India. I followed their way before I got know about recipe. According to Indian way black rice has to be soaked for overnight or at least 8 hours and wash for 2or 3 times then for a cup use 3 /1/2 to 4 cups soak the rice in that water. After the said amount of time cook the rice and when it starts to boil turn off the stove wait for a while then on slow fire cook it till the rice absorbs the water. I cooked exactly the same way. Came out nicely. Your recipe is very good too. I’ll cook your way tomorrow. Forgive me for a long comment. In case if you don’t know the Indian way I ts good to know Though. Tnx so much. I love this Black rice coz of it's less carbs in rice variety... Y dont try this : My recipe No oil nothing and boiled and sweet Ingredients: 1. Black rice - 1 cup 2. Sugar/Jaggery- 7 to 8 tbsp acc to ur taste 3. 3 to 4 tbsp of Grated coconut 4. 4 tbsp of Ghee/butter --Cook rice with water (1:4) till rice is soft (~25 min) --add sugar/jaggery and ghee and stir for 2 min... That's it.... tastes really great... U should try once... Love from India🥰 I'm gonna try urs today😘 looks great

It’s more like a brown rice texture because it has some of the hull left I believe, you can use it for congri I am sure and it would taste great.

Oh I just found your link. It looks like you use Frontier Organic Harissa Seasoning. I’ve used Frontier brand garlic flakes before and liked it so much that we’ve nearly replaced salt with it.
