Here is an easy way to cook your favorite fish. I twisted the traditional New Orleans style blackened fish by using some tropical ingredients plus served it with coconut rice and mango salsa. It is delicious and I hope you all enjoy it as much as we do!

I used the following ingredients, but feel free to use your favorite fish and adjust the amount of oil according to your skillet size.
Caribbean Blackened Fish
Fish Fillets of Choice, 1 - 8 oz Fillet
Seasoning Blend, Like Creole, 1 T
Safflower Oil, 3 T
Coconut Butter , 2 T
Lime Juice

I love trigger fish and I also enjoyed fishing for it my one and only deep sea fishing trip I took lol. This looks really nice and the mango salsa is such the perfect addition!

We in Puerto Rico call that fish Chapín. If you catch it fresh you will see the skin has no scales but is a tough leathery inedible skin. You have to cut all the way around on both sides and then use the knife to peel it off from tail to head by using the knife as a winding key pulling the skin off in a roll around the knife itself much like you used to peel a top of a can of sardines with a key. It seems you are lucky to have gotten your Chapin mostly taken care of. Those bones are few and come out better after cooking....

love, Love, LOVE your herb garden! I've got sooo many questions for you (I'm literally right in the middle of planning one of my own). Would you happen to have a separate video already uploaded to your channel on herb garden? Any advice, do's or dont's? I think I recognize one of the smaller mounds in the middle as sage...what is the other small one right next to it? Absolutely love the HUGE shrub like herb growing towards the back of your bed (on left side in the video), is it rosemary? I'm giddy with anticipation...so excited to hear back from you :)
