Hermes is mainly to do with commerce and trade rather than just running around delivering parcels or messages. He is also a healer and musician (Apollo lite). In truth all the gods in the mythology can almost instantaneously go anywhere. For example Athena seemingly teleports in the Iliad, and multiple gods seemingly appear on the battlefield almost instantly in the narrative. Helios is all-seeing, has prophetic powers, controls the power and flames of the sun and is a veteran of the Titanomachy/Titan War. So realistically he should have been about business. Also during Typhon’s rampage he was literally above everything that was happening, while all of Olympus except Zeus went into hiding, and Gaia herself reverently begs him for even a single ray of his power to help Typhon. Honestly they could have made him Kratos’ bro or a good boss fight, maybe even both because Kratos forced a fight by bringing the Titans, instead of what they did.
