Just today, I was riding into Colter, and saw a 3 star rabbit. I swapped to the varmint rifle and was lining up my shot, when a eagle swooped in and grabbed the rabbit, flew off and passed behind a tree. I aimed blind, hit the eagle, killed it, and rode over. One dead 3 star eagle, and he had dropped the rabbit, which was also dead, and still 3 stars! Its the little details and consequences of having a sharp and cohesive physics system that lends so much greatness to the game.

Not sure if you've done this yet but animals you find dead or kill will decompose the longer your near them. When you kill them they will be fresh, if you set up a camp near it and sleep, when you return it will now be 'rotten', repeat the cycle again and it'll be even more rotted, repeat again and all that will be there is skeletal remains. If you then do this process one more time, the skeletal remains will look like they've been trampled over and destroyed. Afterwards, they will disappear.
