Great looking aeroplane and flight. Rudder and elevator flight control (no ailerons) ?

Well, it has wing warping, a pre aileron functionality. However, it is no differential up or down movement. And with an airfoil and wingshape (decrease reynolds in wingtip) that invites for tipstall, the wing warping can not be used much. The airplane is mostly yawed with rudder to turn. And wing warping as much as possible is not used. Pilot Øyvind Munch Ellingsen said that on this specific flight he flew slightly slower airspeed to obtain an positive climb rate. However then the left turn in climbout, initiated by rudder alone, had a tendency to dig into the turn. The Bleriot XI-2 is slightly tail heavy and has a lifting tail, opposed to oppisite of modern airplanes. It means that in case too low airspeed, the aircraft tend to be pitch unstable. In plain words the flying characteristics are not very good or safe.
