All of the beasts we fight in the game start out angry an progressively get worse and worse But Ludwig who is the most grotesque beast yet too be seen. In his fight, he starts out aggressive. Then suddenly stands up and begins too fight gracefully, like a Hunter. It's just crazy how he became triumphant and brave while still remaining the beast form he's cursed with

This is my interpretation: The great ones supposedly are meant to lose their children, not the other way around, for some unknown eldritch purpose. The humans used old blood to become hunters, powering themselves up enough to kill an old one, Kos, and it's offspring (orphan) placed a curse on humanity, or more accurately on the old blood in his anger. By killing him, you end the curse, cleaning up the mess humanity had made.

+Sneaky Barrel For those who care, this post talks a bit about the story in the DLC. Something to do with the Healing Church conducting horrible blood experiments on people. The whole DLC is about finding out the secrets of the church and the horrible things they've done to people. It sounds like it's said by Maria (the woman at 2:50) who seems motivated to keep people from repeating the line of thinking the Church followed. Of course I'm a bit of a layman so this is just my speculation.

They can, their children are just destined to die for some Eldritch purpose. Kos was killed by the first hunters, created by the church by infusing humans with the old blood.
