No I haven't. My Daddy grew blue corn on the cob, we cooked it and ate it. The kernels were harder but it was delicious.

My favorite way to have blue corn is in tortillas in blue corn chicken enchiladas with red chile. They will always remind me of my grandmother. Those pancakes look so good with the pinon. I'm going to have to make them. I always go to the fruit basket too. Great job...

As soon as I get my recipe for blue corn tortillas down to where I'm confident sharing it, we'll have to share an enchilada or taco recipe using them. They're SO good! The Fruit Basket is awesome. Blue corn is wonderful. An easy thing to try is blue corn tortilla chips, since they’re sold everywhere. But my favorite it enchiladas or tacos with blue corn tortillas.

These are very familiar to me and my family growing up. I was born and raised in Los Alamos, and have family in Santa Fe, and Albuquerque. We would have blue corn Piñon and green chile pancakes or waffles once a month. Blue corn Atole is also a comfort food. Is common for Native (Indian Pueblo nations and Navajo) as well as Hispanic New Mexicans. My family is Hispanic tracing our roots back to Spain. Blue corn, Piñon, and our Red and Green Chile, tortillas (both flour, blue corn, yellow corn, and white corn homemade tortillas, Biscochitos, etc ) is part of our Culinary Heritage. Pinto beans, zucchini with corn, green chile is also a mainstay in our cuisine and part of our culture as well. ¡ viva Nuevo Mexico !

Love this episode. Always interested in learning about regional food. I’ve never had blue corn pancakes, but have had blue corn chips. I’ve been to New Mexico in my younger days, but my husband has not. We’ve talked about a trip there. Would be an easy plane trip from Houston where we live. I want to give these a try. I’m thinking also a blue corn bread to go with a Mexican style stew. Wonderful episode, Marcy.

We navajos we add juniper ash so the purple turns blue and doesn't tastes bitter

I make all my tortillas, pancakes, waffles, muffins, and bread using masa azule. I use only masa for 2 reasons, nutrition and taste. Corn meal typically is not nixtamalized whereas masa is. As you already know, we can’t release all of corn’s vitamins and minerals in a digestible form without nixtamalization, which our meso-American ancestors discovered thousands of years ago. Masa azule is also non-GMO, has an authentic flavor, and is readily available in stores right next to the white or yellow masa harina. It’s also ground finer than meal and incorporates well in batters. Because I’m gluten-free, for batters I use Gluten-Free flour 1/1 with the masa. There is a dangerous ignorance today in western society about GMO corn, and corn products, the requirement to fortify those corn products with additives, and how the human body reacts to them. Especially high fructose corn syrup. Our ancestors were sustained on real corn- accept nothing else in your diet. All GMO corn grown in the US is an unhealthy impostor. Even that which is in animal feed.
